Champagne is the region in north-east France where sparkling wine as we know it was born. Cold climate, pure chalk soils and a method —a second fermentation in the bottle itself— that gives those fine bubbles and that tension you can’t easily fake.
Beyond the luxury houses, the interesting stuff today comes from the vignerons: small growers making champagne from their own vineyard and putting place ahead of the label. That’s where you find the bottles that actually move you.
