A young Avize grower making small-scale, hands-on champagne.
Étienne Calsac is one of those young vignerons changing the face of Champagne. He works just a few hectares in the Côte des Blancs, around Avize, making what’s known as grower champagne: his own fruit, tiny production, hands on every step.
None of the giant houses’ one-size-fits-all approach. The whole point here is place: the chalk, and letting each plot speak for itself. Whenever we taste something of his, it’s almost always a cracker.
